This week I decided to do something different for Vegan Friday. A Vegan Friday in video style! I love watching ‘What I eat in a day’ video’s on YouTube. Especially of people that eat vegan because they inspire me to try new recipes. I thought, why don’t I make one myself? So here it is!
Ingredients – 2 people – 15 minutes
- 3 Chicory
- 3 hands of walnuts
- 3 hands of raisins
- 2 Sweet apples
- 1 Spring onion
- 1 tbs of maple syrup
- 2 tbs Olive oil
- 1 Lemon for the juice
- Salt
- Pepper
- Nutritional yeast (optional)
Watch the video to see how I make this chicory salad. It is delicious, easy to make and healthy (apart from the syrup, but hey, we need something for our sweet tooth too). I ate this salad before I went to my Zumba lesson and it was great! Normally I easily get a side stitch when I eat and work out afterwards, but because this salad is a very light I had energy but not an overly full stomach. Definitely a keeper!
