I realized that I only posted vegan lunch and dinner ideas, OOPS! So I decided to share my favorite breakfast recipe with you. It is (like always) very simple, but really delicious and very healthy. When I indulge into this breakfast I don’t have to eat again within an hour, which is definitely a big plus if you want to have a productive morning.
We often associate February with the letters L.O.V.E, but I didn’t feel like making a Valentines Day monthly. So, I chose plants as my theme for this month. I love how they literally give life to a space and brighten my day. Drawing and painting them is one of my favorite things to do. Pasta, pasta, pasta. I can’t get enough of it! Spaghetti is the perfect comfort food for me, but sometimes I get bored with the red sauce so… I came up with this recipe. Pesto often contains cheese, but it definitely doesn’t have to in order to be delicious. The pesto also goes perfectly hand in hand with the sun dried tomatoes and broccoli. I seriously wish I could give you a bite right now because it is so good, but I guess you just have to make it yourself, haha.
You might have noticed that I am working on being more healthy. Not only with food, but also with working out. I am going to the gym 3 times a week now and it feels great! I’d have to say that a lot of the credit goes to my gym buddy Maja. It is so much more fun to work out with a friend! One of my favorite subjects to talk about is food, especially healthy food, so this naturally came up during lifting weights and trying to breathe normally. I still needed a new recipe for Vegan Friday so I tried to get some inspiration and I came up with the Vegan Rocket Burger! For a lot of people eating vegan sounds like chewing on grass all day, but this isn’t the case at all! When Kelvin tasted this burger he even said: ‘It almost tastes like real meat in a way’. It definitely looks like a real burger to me!
Okay, today I am sharing a very special recipe with you guys. A vegan vegetable soup with arugula pesto. Why is it so special, you may ask? Because it is my favorite. Seriously, whenever Kelvin makes this soup (he always makes it so I needed his help for this article, haha), I just want to keep eating. It is so good!
Who else loves new beginnings? I surely do! My theme for the month of January is growth and so I chose to use a lot of wild flowers. I was greatly inspired by Nu.Journal on Instagram. I love her feed and work that seems to be carefree, impulsive but still very pleasing to the eye. I think there is a lot I can learn from her. Watercolor used to frighten me because it is hard to control, but I am trying to overcome my fears this year and so I used it anyway. I must say that I am happy how it turned out. I also used a lot of color and not just one color scheme. It is a miracle, haha.
I don’t know what it is about new year’s, but it always gives me the thrill of becoming a better version of myself. I get a kick of motivation to start something new. What ‘that something new’ is going to be this year, I am sharing it with you in this video!
Cookies, cake, donuts, they all contain eggs or butter, which makes it difficult to find vegan pastries. But it’s deffinitley not impossible! I found vegan puff pastry in a Dutch store called Jumbo, but there are more supermarkets that sell it. You can make delicious pastries with this, like chocolate croissants and one of my favorites apple turnovers!

Food. Who doesn’t love food? Well, I definitely do, and I love healthy food most of all. The best thing about eating healthy is that I don’t only enjoy the food while I am eating it but when I put my plate on the kitchen counter I still feel good and don’t have to feel guilty or bloated. That’s why eating more plant based meals is my ultimate goal. Today I am going to share one of my favorite foods, vegan lentil curry!
I know, I know, December started a few days ago – aghum – but, better late than never right? Here is my first bullet journal video for December. I chose ‘Winter Wonderland’ for my theme this month and I am loving it! It actually has been snowing here in the Netherlands, which you might have seen on my Instagram. The landscape inspired me and I really wanted to use my new snowflake stamps I got for Sinterklaas (a Dutch holiday). Products I have used will be mentioned down below.
Most of the ornaments are from the same store as the christmas tree, Blokker. I also found these cute wooden snowflakes (€1,99) there in different colours. I first bought them for taking pictures to post on Instagram and such, but then I got the idea to make my own ornaments. I glued two snowflakes together with universal adhesive from Sostrene Grene. A Danish store with decorations, art and craft supplies and many other goodies. Some of them I glued on top of each other and others I just placed at the ends. Then, I held them for a little to make sure they stayed in place. After the snowflakes dried I just used some rope to fasten them to the tree. Easy as that! I love the way it turned out! It is minimalistic, but still decorative and festive. We also bought the wooden reindeer from Blokker (€1,99). While at Sissy-Boy I saw it for something like €9,99, so that was a steal. And… I got one of the pine cones for free, crazy right!? All-in all, we spent €17,51 on this cute christmas setting. It is modern, minimalistic and environmentally friendly because we can use everything again next year. I…
I did my own make up for my big day. I used the beauty glow palette from Charlotte Tilbury for the most of my look. Warm colours suit me best, so this was the perfect palette. For my hair I went to Trust Hair, a hair dresser in The Hague which was close to my grandfather’s house. It is always a good idea to go for a try-out so you don’t have to stress about your hair on the big day. I actually had to have two try-outs, haha. The first time I went to the salon thinking I wanted an updo, but when I looked at the pictures later I realised that it did not suit me that well. So, I went back for a second try out and choose a half updo, which suits me way better. Going back to my grandfather’s place I still wore my casual clothing which was quite funny cause I also wore a veil and had to hold it in my hand. You can imagine the stares I got, haha. And then… the dress! I bought my dress in Zwolle, where I grew up. Hony Bruidsmode is a great wedding shop. The Diane Legrand 6219 dress got adjusted…
Lately, I have been trying to follow a more vegan diet. Some of you might not know what vegan means so let me explain it real quick. It basically means that you don’t eat any animal products, so no meat, fish, dairy, eggs, honey, etc. etc. It is a step further than eating like a vegetarian you could say. I want to eat more vegan because I think it is better for my health, animals and the environment. Although I do occasionally eat eggs, fish and honey, but I never eat dairy products because of my cow milk allergy. Eating vegan isn’t always easy, but there are many options to choose from still. With many recipes you can just leave out the animal product, like in this one for example. I got inspiration from this delicious rice salad recipe from a Dutch supermarket called Albert Heijn. I made this before with crab and mayonaise but the vegan version is tasty as well!
