If you know me well, you know that I love sushi. I love to go out for sushi, but I also make it at home from time to time, as you can read here. Now that I got better at it, I found great new combos for vegan sushi and I am able to prepare it faster, I still find that it takes a bit of time. So when I saw this amazing picture of a sushi bowl from Soy’nCherry on Instagram and got inspired. It is easy and quick to make, so you can eat your delicious food sooner.
One of my favorite foods before I started eating vegan was chicken roti, a Suriname dish. Luckily my husband went on a church mission for 2 years to Suriname and learned how to make it. We mostly eat vegan at home, so he turned it into a vegan recipe. Woohoo! We used Arabian bread instead of real roti for this recipe because this is a lot cheaper. Roti kind of looks like a Dutch pancake, but it is a lot thicker. You just rip a piece of the roti and grab some curry with your hands. So yes, you do eat it with your hands! I personally love it, but the curry does stain your nails, and table… Oh, and clothes! So be careful. Make this dish at your own risk, haha.

Okay, I have to admit, when Kelvin told me about this recipe I wasn’t really jumping on my chair (which is a good thing because I would definitely fall on my face). The thought of bulgur, didn’t really get me excited. To be honest, I didn’t even know what it was, haha. It is some kind of grain, but it has a more of a… rice kind of texture in my opinion. Luckily, I let Kelvin do his magic and this recipe was really, really good! It is so easy to make, healthy, delicious and vegan! Have you ever tried bulgur?
